Fellini’s Trattoria is HSW’s newest addition, located at the New Farm end of the precinct in front of Ciao Papi.  Fellini’s Trattoria is an Italian street food kitchen and bar, inspired by the flavours of coastal Italy and the vibrant energy of Naples.

We are currently recruiting a Sous Chef to join the team to support the Head Chef in delivering exceptional dining experiences, lead and mentor kitchen staff, and ensure the highest standards of quality, consistency, and food safety across all service periods.

Key Responsibilities will include:

• Support the Head Chef in daily kitchen operations and menu execution.
• Lead, train, and motivate the kitchen team to deliver high-quality dishes consistently.
• Maintain excellent food presentation, portion control, and quality standards.
• Assist with menu planning, stock control, and ordering to manage costs effectively.
• Ensure all food safety, hygiene, and workplace health standards are met.
• Foster a positive, collaborative, and efficient kitchen environment.

What we’re looking for:

• A passionate and motivated culinary professional with a hands-on approach.
• Proven experience as a Sous Chef or Senior Chef de Partie in a fast-paced kitchen.
• Strong leadership skills with the ability to inspire and support a diverse team.
• A commitment to maintaining high standards of food quality, presentation, and consistency.
• Excellent communication, organisation, and time-management skills.
• Flexibility to work a variety of shifts, including weekends and evenings.
• A team player who thrives in a dynamic, high-energy environment and leads by example.
