At LDK Greenway Views, we are seeking a creative Head Chef to join the Hospitality Team. Reporting to the Village Hospitality Manager, you will be responsible for managing the day-to-day kitchen operations, whilst ensuring the provision of high-quality dining experiences for residents and guests in our a la carte restaurant, buffet services, meal delivery, three cafés, bar, and event spaces.

Duties will include:

  • Developing recipes, costing and designing menus (café, buffet and meal delivery weekly; a la carte restaurant monthly).
  • Supervising and training kitchen staff and managing the performance of your team
  • Overseeing the food elements of restaurant, special event and café services
  • Ensuring the efficient and timely preparation of meals and beverages
  • Ensuring hygiene standards and cleanliness are maintained
  • Maintaining team engagement through leadership by example and providing support
  • Adhering to HACCP and LDK policies
  • Complying with accreditation standards
  • Daily monitoring of food safety and general OH&S
  • Total stock management including ordering, stock rotation, stock-taking etc.
  • Periodic financial reporting
  • Rostering and managing staff absences
  • Managing maintenance of kitchen equipment

About You:

Qualifications/Certificates

  • Cert III in Commercial Cookery or a higher hospitality qualification
  • Food Safety Supervisor Certification

Professional Experience and Skillset

  • Experience as a Head chef
  • Experience in a hotel environment (desirable)
  • Experience running multiple outlets simultaneously 
  • Quality-driven foodie chef with an eye for details
  • Great team development skills – you have managed a successful culinary team before 
  • Calm under pressure - you don’t take yourself too seriously!
  • Ability to manage change
  • Experience creating and implementing menus
  • Hands-on approach with energy and drive
  • Technically sound cooking skills with a modern approach
  • IT savvy with proven administration skills
  • Extensive, proven cooking experience with referees available
  • Awareness of the dietary requirements of the elderly (desirable)
