Located at Howard Smith Wharves, Mr Percival’s Overwater Bar takes inspiration from iconic European beach clubs with its very own unique Brisbane twist. You’ll feel like it’s summer all year-long, making it a must-visit for locals, interstate tourists and global tastemakers.

Mr Percival’s has some exciting developments on the horizon and therefore we are currently recruiting for an Executive Chef to head up the kitchen at Mr Percival’s. In this newly created role, you will be responsible for overseeing the kitchen team and managing the day to day operations.

Key responsibilities include:

• Manage the smooth running of a busy kitchen, including the daily preparation, production and presentation of food.
• Confidence to utilise your staff management abilities and excellent communication skills to ensure your team know what to expect and deliver every time.
• Hiring, training, and supervising kitchen staff while managing rosters and performance.
• Controlling food costs, managing inventory, and meeting financial targets.
• Ensuring compliance with Australian food safety laws and HACCP standards.
• Handling feedback and occasionally engaging with guests.
• Using local ingredients and promoting eco-friendly kitchen practices.

What we are looking for:

• Previous experience in an established high-volume restaurant as a Head Chef
• Confident in menu creation across Italian styled cuisine
• Ability to lead by example and manage a team with professionalism and energy
