Our Port Melbourne Hostel offers affordable, high-quality accommodation and care to people aged 50 years and over.  We provide a safe, flexible and caring family-style environment, which allows residents to maintain their chosen lifestyles, habits and activities and to be as independent as they choose to be.

 

Your new role

We are currently seeking an experienced Chef / Trade Cook to join our Port Melbourne residential aged care facility on a Part Time basis for 7 days per fortnight.  This position will run the food service and be responsible for the preparation, cooking, storage, delivery, and service of appetising and nutritious meals. Reporting to the Chef In-Charge, you will be responsible for supervising a small team of Food Service Assistants, ensuring safe food practices are followed, and adequate stock levels are maintained.

Your fortnightly roster is as below:

Week 1: Monday, Tuesday, Friday, Saturday & Sunday (0900 to 1700)

Week 2: Wednesday & Thursday (0900 – 1700)

 

Your responsibilities and duties will include:

  • Ensuring all special diets are correct in content and that Textures Modified Foods are compliant with IDDSI Framework and Standards.
  • Assisting in the development of a cleaning schedule and undertake cleaning duties as required.
  • Assisting in the development and review of standard recipes for each menu item.
  • Assisting in developing a standard operational manual covering all aspects of service.
  • Ensuring all meals produced are of a good visual and nutritional standard.
  • Assisting in the planning and organisation of daily activities ensuring effective production and cost control.

What we will need from you:

  • Food handling certificate Level II
  • Possess a certificate of a recognised course in cookery or catering
  • Relevant experience in catering or aged care catering
  • Ability to respond flexibly to changes in the environment
  • Experience in a supervisory role
  • Experience in food safety program planning, operation, & review
  • Experience in menu planning for residential care target group
  • Excellent communication skills and operate as a team player
