Wintringham is a specialised non-religious not-for-profit welfare organisation. We are committed to providing older people who are at risk or have experienced homelessness with a range of high-quality care, housing and services. We employ more than 1,000 staff across Victoria and Tasmania.
The Ron Conn Production kitchen is a state-of-the-art kitchen specifically designed to provide a high quality food and nutritional service for the residents of the Wintringham Aged Care homes.
Your new role
We are currently seeking an experienced Chef / Trade Cook to join our Production Kitchen on a Full Time basis. This position will run the food service and be responsible for the preparation, cooking, storage, delivery, and service of appetising and nutritious meals. Reporting to the Executive Chef, you will be responsible for supervising a small team of Food Service Assistants, ensuring safe food practices are followed, and adequate stock levels are maintained. The available shifts are either 0630 to 1430 or 1100 to 1900 and shift allocation will be determined by your availability.
Your responsibilities and duties will include the below:
- Responsible for the preparation, cooking, storage, delivery, and service of an appetising, nutritious meals service
- Responsible for the safe receipt, handling, storage of provisions and equipment used by food services at the facility
- Assist the Executive Chef to develop, maintain, and review a choice menu that meets the food and nutritional needs of residents and complies with accreditation standards
- As directed by the Executive Chef, maintain and manage stock levels at the appropriate levels to be sufficient for the provision of the meals service
- Follow policies and procedures, and assist in the review of the food safety program to ensure that food is handled in a manner that is safe, appropriate and complies with the relevant legislation
- Ensure all meals produced are of a good visual and nutritional standard in quantities appropriate with the needs of each resident
- Ensure all special diets are correct in content and that Textured Modified Foods are compliant with the IDDSI framework and standards
- Control and monitor wastage levels, ensure all staff are aware of appropriate portion control protocols
- Assist the Food Services Team with the development of a cleaning schedule/manual that will include written procedures, chemicals required, PPE for each cleaning function within the kitchen and dining room

What we will need from you:
- Certificate III in Commercial cookery or similar
- Basic Food Safety HLTFSE001
- Food Safety Supervisor HLTFS005 & HLTSE007
- Ability to respond flexibly to changes in the environment
- Experience in a supervisory role
- Experience in food safety program planning, operation, & review
- Experience in menu planning for residential care target group
- Excellent communication skills and operate as a team player
