The 203 is the newest addition to the Stanbroke family - a sophisticated Brisbane restaurant delivering a curated menu of traditional Italian pasta and Queensland’s highest-quality beef in a true farm-to-table experience.

Following an exciting refresh, The 203 now showcases a newly renovated look and an elevated new menu, creating an even more refined and contemporary dining experience for our guests.

Your Role:
We’re seeking an experienced and passionate Head Chef to lead our kitchen and drive culinary excellence. This is a hands-on leadership position suited to a high-end Head Chef or Senior Sous Chef with premium or fine-dining experience who can elevate The 203 through innovation, discipline and uncompromising standards.

You will take full ownership of kitchen operations while shaping the culinary vision, strengthening the restaurant’s reputation and positioning The 203 as a destination dining venue in Brisbane. Success in this role requires strong technical skill, attention to detail and refinement, the ability to build disciplined, high-performing kitchen teams, and the commercial nous to balance creativity with profitability.

What You’ll Be Doing:
• Leading and mentoring the kitchen team to deliver high standards every service
• Designing and evolving seasonal menus aligned with The 203 brand and concept
• Overseeing food preparation, presentation and consistency across all dishes
• Managing stock control, ordering and supplier relationships
• Ensuring compliance with food safety, hygiene and WHS standards
• Rostering, training and developing kitchen staff
• Managing kitchen costs, yields and wastage to meet financial targets
• Fostering a positive, high-performance kitchen culture

Who We’re Looking For:
• Proven experience as a Head Chef or Senior Sous Chef in a premium or fine-dining environment
• Demonstrated ability to take an established venue and elevate it to a higher standard
• Strong technical foundation with an eye for detail, finesse and refinement
• Proven track record of building disciplined, high-performing kitchen teams
• Confidence to lead from the front while maintaining professionalism, structure and respect
• Sound financial and cost-control capability with commercial awareness
• Formal culinary qualifications preferred
• Calm, solutions-focused approach during busy service periods
• A collaborative leader who builds strong team morale
