Inspired by Head Chef, Louis Tikaram’s travels across the globe and grounded by his local roots. Stanley’s menu showcases some of the best seafood, meat, vegetables, and fruit in the world.

We are seeking an experienced and passionate Bar Manager to oversee the beverage operations across both venues and lead our talented bar team. As our Bar Manager, you’ll be responsible for driving the bar experience at both Stanley and Stans Lounge. You will champion beverage quality, consistency, team development and exceptional service. This role is ideal for a leader with a strong background in premium bars, creative cocktail development and a commitment to guest-centric hospitality.

Key responsibilities include:

  • Manage all beverage operations across Stanley and Stans Lounge.
  • Lead, mentor and train the bar team, fostering a culture of excellence.
  • Oversee cocktail development, wine and spirits selection and seasonal updates.
  • Ensure consistency in service standards, drink presentation and guest experience.
  • Monitor stock levels, ordering, cost control and supplier relationships.
  • Maintain RSA compliance, bar safety and venue policies.
  • Collaborate with management on events, promotions and service flow.
  • Support floor operations during peak service times.

What we are looking for:

  • Proven experience as a Bar Manager or Senior Bartender in premium dining or high-end bar environments
  • Strong beverage knowledge — cocktails, wine, spirits and trends
  • A creative approach to menu development and presentation
  • Excellent leadership, communication and team-building skills
  • A hands-on operator who leads with professionalism and positivity
  • Exceptional organisational skills and attention to detail
  • Current RSA and RMLV
