We are seeking an enthusiastic Sous Chef - Retail and Events to join our expanding team at the prestigious Australian Institute of Sport (AIS) in Bruce, ACT. This is a unique full-time opportunity to be part of a vibrant culinary environment. At AIS, you’ll support diverse events, from high-profile conferences to grand 900+ guest gala dinners at the AIS Arena. Additionally, you’ll oversee and elevate the food offerings across the retail outlets within the AIS precinct. Grow with us and make your mark in an iconic Australian venue!
The Role:
- Collaborate closely with the Head Chef to develop and deliver high-quality, consistent dishes across events and retail outlets, ensuring exceptional flavor, presentation, and quality.
- Lead and motivate the kitchen team with a hands-on approach, managing day-to-day operations and supporting the Head Chef in all areas.
- Maintain high standards of food safety and compliance with legislation in all aspects of kitchen operations.
- Oversee the execution of diverse menus, focusing on local produce, nutrition, and fresh, seasonal ingredients for events ranging from conferences to large-scale galas.
- Coordinate with Front of House and clients to ensure seamless food service and excellent client relations.
- Quality-check all dishes before service to maintain consistency and presentation standards across the AIS precinct.
- Foster a positive, team-oriented culture by mentoring, training, and motivating the kitchen staff.
- Take initiative in menu development, encouraging the team to showcase creativity and culinary flair for continual team and service growth.
This role requires strong organizational and communication skills to manage multiple outlets efficiently and maintain high standards for all AIS Arena events and retail operations.
About You:
- You bring 2+ years of experience in high-volume dining, events, or 4-5* conference settings and a knack for leading kitchen teams with confidence.
- Proven track record in handling large-scale events, ensuring quality, consistency, and a memorable experience for every guest.
- Skilled in stock rotation, cost control, and kitchen hygiene practices, with solid knowledge of base cooking techniques, sauces, larder, and butchery.
- You’re flexible and ready to work a 7-day roster, including nights, weekends, and holidays, to make every event a success.
- Strong team leader with experience in training and supporting staff development and motivated to maintain a positive kitchen culture.
- Excellent communication and organizational skills that keep the kitchen running smoothly, with every catering detail accounted for.
- Must have a valid WWVP Card (Working with Vulnerable People Check)
